Mary Jo and I were high school sweethearts from rival high schools and we have been friends for 37 years. Ironically, food brought us together, when I ventured as a teenager into one of our local fast food restaurants, where Mary Jo worked and cooked the food. She was a beauty with flowing dark hair and soft brown eyes and was stunning, even in her blue work uniform, WITH THE FRAGRANCE OF MINCED ONIONS!

A Message from the President of FoodRenaissance.com, Mary Jo Sarro, M.Ed.
We have enjoyed the blessings of an amazing culinary journey that has transformed our bodies and created a personal renaissance in our life. For many people, diets and some "healthy" recipes have never led to a sustainable healthy lifestyle. We have lived this food for an extended period of time and each day is another step in striving toward better health. Our Seven Secrets create the Synergy of Food. Anyone can learn, enjoy and share with family and friends.
We try not to struggle with food. We enjoy food. We believe that we achieved weight loss because we did not focus on weight loss. Each day simply begins and ends with the enjoyment of delicious and nutritious food. It is part of a simple and sustainable routine. We choose our positive life choices.
A renaissance is a rebirth, a renewal, a revival. Our comprehensive approach to food inspired us to develop our own individualized routine and healthy lifestyle. Working inside and outside of the home can be challenging. Everyone has been struggling to get the energy necessary to meet the demanding family and work schedules of each day. We get the energy we need from delicious and nutritious food, that is prepared fast and can go with us anywhere and is suited to our individual choices. Even when we prepare the same food for the family at home, it is plated differently by each person. This Food Renaissance can become your journey to experience a personal renaissance in your life.
Reawaken each day with a healthy culinary experience by releasing all of the flavors that you enjoy with the synergy of your food. Learn to shop, prepare, cook, select and order delicious and nutritious food, with our techniques and our unique approach to using spices and herbs. Our sustainability is enhanced by the simplicity of our approach in the real world and the synergy of the combinations of food, which can be found in ordinary supermarkets. That is how "The Shrinking Sarros" have become "The Supermarket Sarros."
At home, at the workplace, on the go, at a restaurant, educating yourself about what is in your food and how it affects your body will empower you to take the simple and important actions to take charge of your food selections, wherever you choose to enjoy your food. It is important to educate your body and your mind with wonderful food. It is the easy, consistent daily action and nourishment that energizes Sarro's Synergy of Food. Simple actions have a positive cumulative effect.
We are lifetime learners. Find the approach that works best for you, by learning how to help your body, while you enjoy your food. SARRO'S CLASSIC DIPS
LENTIL
2 cups dry lentils (1 pound) 7-8 cups of hot water ½ cup diced celery ½ cup diced carrots 1 cup diced sweet potato 2 cloves diced garlic ½ cup diced smoked ham (optional)
Rinse
lentils before cooking. In a large pot combine lentils, water, carrot, garlic, celery
and sweet potatoes. Add spices and herbs to personalize flavor. Tilt lid on pot
and slowly simmer for about 20-25 minutes. Keep heat low and stir frequently.
Start off with 7 cups of water and add more if mixture needs more liquid. If you are including
ham, just add it at the same time as the vegetables. For a paste consistency, use food
processor. Separate into freezable containers for quick and easy use for future
meals. Enjoy!

SARRO'S CIABATTA SUPREMA
Cut red or green peppers, mushrooms and squash into evenly sized pieces and saute for 7-10 minutes, in pan coated with olive oil cooking spray. Cut Ciabatta loaf in half horizontally and remove soft center of bread. Spray top and bottom halves with olive oil cooking spray. Lightly sprinkle grated sharp white cheddar cheese on both halves and toast for 4-5 minutes. Layer peppers, mushrooms, squash and one diced anchovy (optional) onto bottom half of loaf. Toast both halves again for another 5 minutes. Remove from oven and top with fresh romaine lettuce as you put together the sandwich. Cut into desired serving size. (Approximately 250 calories per two-inch sandwich.) A few thin slices of Coconut Chicken along with string beans and spinach sautéed in butter cooking spray and garlic powder will complete the meal.

SARRO PASTA MEDLEY
1/2 box Penna Rigate pasta (replace with rice pasta for gluten free) 1 cup grade tomatoes 1/2 cup portabella mushrooms 1/2 cup green and yellow peppers 1/2 cup eggplant 1/2 cup butternut squash 1/2 cup asparagus 1/2 cup cauliflower 2 cups fresh baby spinach 3 tablespoons grated parmesan cheese 3 cloves garlic 1 teaspoon basil 1 teaspoon oregano 1/4 teaspoon crushed red pepper 3 tablespoons extra virgin olive oil
In a large frying pan, heat olive oil on low temperature (same amount of anchovy oil is also fabulous). Gradually, increase temperature to medium and add diced fresh garlic and continue stirring to prevent burning. Add spices and herbs, along with cut peppers, mushrooms, eggplant, butternut squash, asparagus and cauliflower. Cover and continue cooking until veggies are soft.
Cook pasta according to directions. Before draining, save 1/4 cup of pasta water. Add pasta water into frying pan mixture, cover and cook for 5 minutes. Add pasta, tomatoes and spinach and mix completely. Turn off heat and let stand for 10 minutes. Before serving, top with grated parmesan cheese.
Three thin slices of cooked chicken breast and 1/2 cup of Mary Jo's garlic crunches compliments this meal nicely.
If you prefer, have a garden salad with fresh veggies topped with a spray of lite salad dressing instead of chicken and crunches. Makes 4 servings. Enjoy!
